2.空心菜用水浸泡10分钟,可以去除残留的农药,不是自己家种的青菜,最好还是泡一下水,吃的放心一点。

3.蒜米去皮切成颗粒,辣椒切成小段,今天用的辣椒有点辣,放一个就够了,喜欢吃辣的可以根据口味多放点。

4.豆腐乳,炒空心菜用半块就可以了,豆腐乳很咸,可以不放盐调味。

5.空心菜清洗干净后摘掉老的叶子,菜梗摘成合适入口的长度,不用摘断,沥一下水份。

6.热锅下油,放入蒜米和辣椒小火煸出香味,炒青菜用猪油比较香,如果没有用玉米油或者花生油都可以。

7.放入空心菜,大火翻炒几分钟,大火炒青菜锁住水分,炒出来的菜不会发黑。今天用的锅不够深,炒的时候老担心翻到外面去,建议用深的炒锅。

8.空心菜炒到断生,加入豆腐乳继续翻炒,豆腐乳本身比较咸,可以不用加盐调味。如果口味比较重,可以适当加盐。

9.翻炒均匀后可以关火出锅了
